1 pheasant, cut in pieces 1/4 c. pancake mix 1/4 c. butter 1 c. mushrooms 3 T. chopped onion 1/2 c. stock 1 T. lemon juice 1/2 t. salt 1/2 t. pepper |

Dredge/w cut up p ieces of pheasant in pancake mix. Brown pieces in butter until golden brown (10 min). Remove pieces. In remaining butter in skillet, saute mushrooms & chopped onion until golden brown. Return meat to skillet; add stock, lemon juice & seasonings. Cover & simmer 1 hr. or until tender. Remove cover last 10-15 min. to recrisp meat. |
