2 cups orange juice 2 cups chicken broth 4 cups couscous 1 cup dried cranberries 3/4 cup chopped red onion 1/2 cup chopped fresh parsley |

Bring orange juice and chicken broth to a boil; stir in couscous. Remove from heat; cover and let stand 5 minutes. Stir in cranberries, onion and parsley.
Serves 12. This recipe could be very easily halved.
