Brunch Fruit Salad January 2008

1 large can pineapple tidbits (reserve juice in sauce pan).
2 large cans mandarin oranges (drained.)
1 #303 can sliced peaches cut in pieces (drained).
Green grapes cut in half a good hand full. 
1 lb container strawberries sliced thin.
2 large bananas cut in circles (save and cut 
right before serving.) And fold into the fruit salad.

Dressing:
1/3 cup orange juice 2 Tablespoons corn starch
1/2 cup sugar 1 Tablespoon lemon juice

Juice reserved from the pineapple tidbits is 
already in a sauce pan. So add the other ingredients 
listed under dressing. Stir until smooth with a 
small whisk. Bring to a boil; reduce heat and cook 
for 2 minutes stir often. Will thicken and be glossy 
looking. Pour over fruit and mix gently. Cover and 
refrigerate until time too serve.
