2 lbs. frozen or fresh scallops thawed, drained well Salt lightly (crackers will add more salt) 1/2 cup buttermilk 1 cup Ritz crackers, crushed 1/4 cup butter, melted 2 Tbsps lemon juice |

Preheat oven to 400 degrees. In a bowl, season the scallops with salt (go easy). Add buttermilk and toss to coat scallops. Place scallops in an oven-proofed, buttered casserole and cover with the Ritz cracker crumbs. Top with melted butter. Bake for 20 minutes uncovered. Sprinkle the lemon juice over the scallops and serve. I get about 4 servings out of this.
