Apple Cauliflower Salad WW March 2008

6 Servings (2/3 cup serving)
1 Weight Watcher Point *

2 large unpeeled Red Delicious apples, thinly sliced
1 cup chopped cauliflower
3/4 cup Poppy Seed Dressing (see recipe below)
Lettuce leaves

Combine apple sliced and cauliflower in a medium mixing bowl. Add
Poppy Seed Dressing, and toss lightly to coat. Cover and refrigerate
until thoroughly chilled. Serve salad on individual lettuce-lined
plates, if desired.

Poppy Seed Dressing
1 teaspoon grated orange rind
2 tablespoons unsweetened orange juice
2 tablespoons lemon juice
1/2 teaspoon dry mustard
1 teaspoon salt
1/4 teaspoon paprika
1 cup plain, unsweetened low-fat yogurt

Combine all ingredients, except yogurt, in a small bowl, stirring
until well blended; gently fold in yogurt. Cover and refrigerate
until thoroughly chilled. (This is great for fruit salads)
Yield: 1-1/2 cups (Serving - 2 tablespoons)
