The
recipes on this site have been tried and tested.
Lima Bean Salad
1 package frozen lima beans
1 teaspoon salt
Cook until done or package
directions (No Margarine)
Drain the water from the beans
In a small pan heat the
following:
1 tsp garlic salt (can use
regular salt and minced garlic)
1/4 cup vinegar or lemon juice
1/4 cup sugar
2 tablespoons olive oil or
vegetable oil
Mix the mixture with the beans.
Can be served hot or cold. This
is also good if you want to add
minced onion, kidney beans,
green beans, chopped carrots,
celery. You may have to make a
little more of the mixture to go
over them.
Makes 6 servings
Tomato Soup Lima Bean
Casserole
1 (1 pound) bag large lima beans
1 chopped green pepper
1 chopped onion
1 can tomato soup
1 tablespoon sugar
1 teaspoon dry mustard
bacon strips to top
Soak beans in water overnight.
Cook beans until tender. Drain
beans, reserving the broth and
put beans in baking dish. Saute
green pepper and onion in frying
pan until tender. Add to lima
beans and stir. Add tomato soup
and 1 cup broth from lima beans.
Add sugar and dry mustard and
stir. Put bacon strips on top
and bake in a 350 degrees oven
for 1 hour.
Lima Bean and Onion Ring
Casserole
2 (10 ounce) package frozen lima
beans
1 can condensed cheese soup
1/4 cup parsley
3/4 cup sliced celery
3 1/2 ounce can onion rings
Cook frozen lima beans per
package instructions. Drain.
Blend soup and parsley together.
Place 1/2 of lima beans and 1/2
of the celery in a greased
casserole. Cover with 1/2 of the
soup mixture. Top with 1/2 of
the canned onion rings. Add
remaining lima beans. Cover with
remaining soup mixture. Bake at
350 degrees for 35 minutes.
Border casserole with remaining
onion rings. Bake 10 minutes
longer or until onion rings are
brown.
